Brewery: Koshi Meijyo

Koshi Meijyo (越銘醸) is a boutique collective sake brewery located in the city of Nagaoka, Niigata prefecture with a history of more than 150 years. The brewer delicately farms their own rice in the fields of Nagaoka, ensuring that the produce stays organic, with the help of wild ducks in the region.

Koshi Meijyo carries through the process of harvesting, selecting and polishing from the start to the end, often gathering the local community throughout the farming and brewing process. Very often, they are very successful in brewing a very limited amount of excellent sake adored by the people of the city.

Sake: Ichijyo 21

The Ichijyo 21 is brewed using one of the finest Koshi Tanrei rice farmed organically in Nagaoka, Niigata. Koshi Meijyo, the local brewer, painstakingly mills the rice to an astonishing 21% with a very fine process that lasts more than one week. The end-result is one of the finest sake produced in Niigata.
