Brewery: Kato Kichibee
Kato Kichibee Shoten (加藤吉平商店) is a multi-award winning sake brewery established in the city of Sabae, Fukui prefecture in 1860. With a history of more than 150 years, Kato Kichibee has established themselves as one of the finest and best sake breweries in the country. Their sake was lauded and served to the Emperor Showa since a century ago during states ceremonies, and to this date is still frequently celebrated when served at both royal and state functions.
Sake: Born Chogin
The Born Chogin (梵 . 超吟) is made to transcend the Ginjyo Shu, the sake of generations. The Chogin is milled down to a rice polish ratio of 20%, and is only bottled after a 5 year aging process at a temperature of negative 8 degrees celsius. Often lauded as one of the best sake ever made, the born Chogin leaves a scent of grapefruit to the nose, and leaves a delightful and light citrus-sy after taste.
This sake is produced in extremely limited quantities.
